Ginger Nuts
This is by far the best ginger biscuit recipe I’ve come across. It’s crispy, flattens well and cracks beautifully on the top.
Ingredients:
200g butter
2 cups castor sugar
1 egg
1/2 cup golden syrup
4 tsp ginger
2 tsp cinnamon
1/2 tsp cloves/mixed spice
1 and 1/2 tsp bicarb (must be fresh)
500g self-raising flour
Method:
Combine butter and castor sugar well. Add the egg and golden syrup. Add the rest of the ingredients. Add the flour last. You may not need all the flour – add enough flour to make a soft dough. Use the dough to make small balls. Don’t flatten them. Dip them in sugar. Place on a tray and bake at 160 until browned.
